- Purple potatoes, cooked and sliced
- Mixed salad (lettuce, rocket, etc.)
- Pieces of cooked salmon (or gravlax for a variation)

Instructions
- Prepare the Salad:
- Mix the purple potato slices with the mixed salad in a large salad bowl.
- Add the cooked salmon pieces for a rich, delicate flavour.
- Pour over a light vinaigrette made with olive oil, lemon juice, salt and pepper, then toss well to coat all ingredients.
