Purple Potato and Salmon Salad

Ingredients

  • Purple potatoes, cooked and sliced
  • Mixed salad (lettuce, rocket, etc.)
  • Pieces of cooked salmon (or gravlax for a variation)
  • Light vinaigrette (olive oil, lemon juice, salt, pepper)
  • A few fresh herbs (dill, parsley)

Instructions

  1. Prepare the Salad:
    • Mix the purple potato slices with the mixed salad in a large salad bowl.
    • Add the cooked salmon pieces for a rich, delicate flavour.
    • Pour over a light vinaigrette made with olive oil, lemon juice, salt and pepper, then toss well to coat all ingredients.
    • Garnish the salad with fresh herbs such as dill and parsley for an aromatic and visually pleasing touch.
